Meredith is an old crush of Nathan who began living with him and his roommate Enrique after she got divorced from her husband. When Enrique got married and moved out, Meredith stayed, much to the anger of Nathan's Internet girlfriend, Amber.

Then she convinced Nathan to grow a pedostache, which again did little to endear her to Amber.

Then immediately after Amber broke up with him, she had Nathan shave, and had hot, soggy smexings with him. Which, we assume, wouldn't do anything to improve her status with Amber any further.

Apparently she works at Wal-Mart.
